Spicy Mint Pulao - Pudina Rice Recipe

Basically this rice recipe flavoured with mint leaves. Mint pulao can be easily served for lunch or dinner.

This is a very simple and flavorful rice perfect for bachelors and busy women. It's also known as Pudina Rice is a refreshing dish made from mint leaves. When you buy a bunch of mint leaves and want to finish it quick, this is the best you can make other than mint chutney, mostly pudina rice and pudina chutney is prepared because of its great taste, it also has to offer several health benefits. mint pulao is highly recommended during indigestion.

Serve Pudina Rice along with Raita for your lunch or you can also pack it in your lunch box.

Ingredients

  • 1 cup Rice
  • 2-1/2 cups Mint Leaves (Pudina)
  • 3 Green Chillies , slit
  • 3 Cloves Garlic
  • 1-inch Ginger
  • 1 teaspoon Lemon Juice
  • 1 Onion , finely chopped
  • 2 teaspoons Cooking oil
  • 1 teaspoon Mustard seeds
  • 1 teaspoon White Urad Dal (Split)
  • Salt , to taste

Mint pulao recipe

1. To begin making the Pudina Rice Recipe, we first have to cook the rice. I most often like to use a day old rice for making Pudina rice, but you can cook fresh rice as well.

2. Cook the rice with 2 cups of water along with a little salt and a tablespoon of oil until all the water is absorbed. Allow the cooked rice to rest for a while and use it to make the Pudina Rice only after it has completely cooled down.

3. Wash the pudina leaves. Using a mixer grinder, grind the pudina leaves along with the green chillies and lemon juice, ginger and garlic into a smooth paste.

4. Heat the oil in a medium heat add the mustard seeds and allow it to crackle. Stir in the urad dal and cashew nuts roast it until it turns light golden brown and  Add the onions and saute until the onions turn translucent.

5. Now add the ground pudina mixture and salt. Give it a stir and let it cook for 5 minutes until the mixture turns a little thick.

6. Turn off the heat and finally stir in the cooked rice to this mixture until well combined.

Finally serve hot along with some Raita
