Hyderabadi Special Sheer Khurma

SHEER KHURMA - Warm sweet vermicelli milk recipe by my friend's Mother -  The milky goodness of ghee-tossed vermicelli, warm saffron milk, chopped pistachios, and chewy, sweet dried dates, is a pure treat to tastebuds.

I love love love Sheer Khurma since childhood. I used to live in a area were it surrounded by all religions. Whenever there was any festive occasion of any religion. We all used to celebrate together and distributed sweets. Sheer Khurma was one of them. I still remember my childhood days when we used to look forward to my friend bringing this sweet freshly prepared in steel dabba(box) to my house.  Now my lifestyle has changed and now very rarely I get Sheer Khurma. So I thought of cooking it for myself :)... Hope you enjoy this Rich, creamy and heavenly SHEER KHURMA as much as I do!!❤️ 

Ingredients:

  • 2 litres Full Fat Milk
  • ½ cup Sugar (may vary according to the amount of sweetness you prefer)
  • 250 g Fine Vermicelli
  • 1/4 cup chopped Almonds
  • 1/4 cup chopped Pistachios 
  • 8 Dates (deseeded and chopped)
  •  1 cup  Ghee
  • 2 tsp Cardamom Powder
  • 6 green cardamom
  • Few strands of saffron

Instructions:

  1. In a pan, heat ¾ cup of ghee, sae utslivered almonds, pistachios until it just turns golden colour, but not burnt.
  2. Immediately take it out on to a plate and set aside.
  3. In a same pan, add dates and fry for few seconds until aromatic, ensure it does not burn. Take it out and keep it aside.
  4. Add fine vermicelli and roast until just golden and aromatic.
  5. Carefully keep an eye, as fine vermicelli tends to burn fast. Take it out and set aside.
  6. Pour milk in a large heavy bottom pot and place in on the stove top. 
  7. Bring the milk to a boil and then simmer on low heat for 10 minutes
  8. Then add cardamom powder and simmer for another 5 minutes until aromatic.
  9. Add saffron strands mix and simmer for 10 minutes.
  10. Now, add fried dry fruits, dates, vermicelli, sugar and mix.
  11. Simmer for another 15 minutes atleast. 
  12. Switch off the heat and prepare and keep it a side. 
  13. Heat remaining ghee in a small pan and add green cardamom pods, fry for few seconds.
  14. Finally, pour the cardamom tempering over the sheer korma and it is ready to serve.
