Vegetarian student biryani recipe with mixed vegetable raita

It has become a popular biryani recipe all over the world. especially, student biryani has become a popular dish with young generations and teenagers.

Ingredients

To cook rice

  • 1½ cup basmati rice, washed & soaked 30 minutes
  • 6 cups water
  • 1 star anise
  • 7 cloves
  • 1 inch cinnamon stick / dalchini
  • 1 bay leaf / tej patta
  • 2 cardamom / elaichi
  • 1 tsp black pepper
  • 1 tsp oil
  • salt to taste

For biryani

  • 4 tbsp oil or ghee
  • 1 onion, finely chopped
  • 1 tsp ginger-garlic paste
  •  6 cauliflower / gobi, florets
  • 1 potato, cubed
  • 1 tomato, finely chopped
  • 8 broccoli, florets
  • Half tsp turmeric powder / haldi
  • 1 tsp kashmiri chilli powder
  • Three-quarter teaspoon coriander powder
  • 1½ tsp biryani masala
  • salt to taste
  • 1 cup water
  • ½ cup curd / yogurt
  • Handfull of mint / pudina
  • Handfull of coriander leaves, chopped
  • ¼ cup fried onion

Preparation method

  1. To begin with, place water along with the spices, salt, oil and basmati rice in a large cooking pot
  2. Cook the rice grains for approximately 10 minutes
  3. Further drain the rice and rinse with water
  4. Add oil or ghee in a seperate large pan (or kadai)
  5. Further saute onions, ginger-garlic paste.
  6. Add given vegetables except broccoli and tomatoes.
  7. Further add turmeric, chilli powder, coriander powder and salt.
  8. Add water and curd. mix well and add biryani masala.
  9. Add broccoli and tomatoes.
  10. Furthermore, cover and cook for 15 minutes.
  11. Now take a cup of masala stock and keep aside.will reuse it later.
  12. Now add mint on top , spread the cooked rice uniformly, then pour the reserved masala stock randomly.
  13. Now layer some mint coriander leaves and fried onions on top
  14. Finally, cover and cook for 20 minutes and serve hot with Mixed vegetable raita
