The easiest and cheesy pasta made in a single pot

This one-pot pasta wonder combines sliced garlic and fresh basil leaves for a light pasta dish your family will be sure to request again. I’ll probably be cooking this once every couple weeks, that’s how good it was. Try this now, you won’t regret it.
Ingredients
- 150g Spaghetti / pasta
- 1 large onion (very thinly-sliced)
- 6 garlic cloves (minced)
- 8-10 cherry tomatoes (halved)
- 5-6 basil leaves (torn in half)
- 2 tbsp olive oil
- ½ tsp red pepper flakes
- 2 tsp salt
- ¼ tsp black peppercorn
- 4 and ½ cups water
- 1 cup cheese (freshly grated)
- ½ cup pine nuts (toasted)
Preparation Method
- Heat 2 tbsp of oil in a pot and add sliced onion, 1 tbsp minced garlic and 8-10 grape tomatoes.
- Mix, then add 5-6 fresh basil leaves, red pepper flakes and black pepper corns.
- Add salt, water and then the spaghetti / pasta.
- Grate cheese straight into the pot.
- Cook for 10-12 minutes with the lid on.
- Reduce to a low simmer and keep covered and cook for about 10 minutes, stirring every 2 minutes or so. Cook until almost all liquid has evaporated
- Garnish with pine nuts, olives, fresh basil leaves and grated cheese and serve hot.
