I love this chaat a lot and can even eat it like a salad. It is full of flavors and aroma. It is made by boiling dry white peas. When the peas are boiled and cooled, spices and chutneys are added for flavoring.

My Atha's family (dad's sister) used to leave nowhere near any coffee shop or restaurant it's like more military Area. The only place and close to us was this chaat bandi where only Matar Chaat,samosa chaaat and Pani puri was served. As a result, this chaat brings back many happy memories for me and is very close to my heart.

This was on my todo list for a long time. Finally I made it today for our Sunday treat and turned out to be so tasty. Peas are topped along with the choice of chutney (green chutney or sweet chutney or both),I finely chopped onions,tomato,chaat masala, Ā Plain Sev, coriander leaves and lemon juice. Done āœ”

  • 1 Cup Dried Yellow Peas
  • 1 Medium Size Potato
  • 1 Medium Size Onion Chopped
  • 1 Medium Size Tomato Chopped
  • 3 tbsp Oil
  • 1 Bay Leaf
  • 1 tsp Cumin Seeds
  • 2 tsp Ginger-Garlic Paste
  • 1/2 tsp Turmeric Powder
  • 1/2 tsp Red Chili Powder
  • 1 tsp Garam Masala
  • 1/2 tsp Cumin powder
  • Ā 1 tsp Coriander Powder
  • Salt

For Garnishing:

  • Ā 1/2 cup Onion Finely Chopped
  • 1/2 cup Tomato Finely Chopped
  • 1/2 Cup Thin Sev
  • Ā 1-2 Green Chili Finely ChoppedĀ 
  • Chopped Coriander Leaves
  • 1 lemon
  • 1 tbsp Black salt
  • 1 tbsp Chaat Masala
  • Tamarind Chutney (optional)
  • Green Chutney (optional)

Preparation Method:

  1. Wash and soak yellow peas for 7-8 hrs or overnight.

  2. Once soaked perfectly, then add soaked yellow peas into the pressure cooker with required water and salt.Ā 
  3. Cook the yellow peas on medium fame till 2-3 whistle. Switch off the flame and keep aside to cool down the cooker

  4. In pan, add 1 tbsp oil. Once the oil gets hot enough, add cumin seeds, bay leaf and chopped onion and sautƩ it tills soft and golden brown.

  5. Now add ginger garlic paste and stir it. Add chopped tomatoes, turmeric, red chili powder, cumin powder, coriander powder and salt. Stir it again till the mixture becomes soft and starts leaving some oil.

  6. Add cooked yellow peas and ½ cup of water, mix it properly and cook it till it starts boiling. Now add garam masala, mix it and cook it again for 2-3 mins.

  7. Ghugni is ready now. Serve hot in a serving bowl, garnish it with chopped onion, tomatoes, Thin sev green chilies and chopped coriander leaves. Sprinkle some chaat masala, black salt and enjoy it.

  8. You can also top up with some tamarind and green chutney to make street food style Ghugni.
